Heavenly roasted summer squash

This recipe is super simple but oh so delicious. My absolute favorite way to eat zucchini, hands down. The key here is a really hot oven, so that the squash and onions caramelize and develop this otherworldly savory-sweetness and just melt in your mouth! You can easily do this with just zucchini, but it’s great to liven things up with fun shapes and colors like yellow pattypan and heirloom squash varieties. Makes enough for 3-4 servings as a side dish.

Ingredients:

  • 4 medium-sized summer squash
  • 1 small yellow onion (sweet onions are the best)
  • 3 Tbsp extra virgin olive oil
  • 1 tsp sea salt
  • 1/2 tsp fresh ground black pepper

Preheat oven to 400 F. Wash, trim, and slice the squash into 1/2 inch thick slices. Chop the onion into 1/4 inch pieces. Add to your baking dish with the olive oil, salt and pepper, and toss to coat all the veggies evenly.

Roast your veggies for about 25 min, stirring periodically. You will know when they are done when the zucchini is soft and almost falling apart, and the onions are browning on the edges, and your kitchen smells delicious! Enjoy!
